Chicken - Crispy Potato Chicken

Ingredients

  • 1 medium potato (not peeled – about 5 oz)
  • T Tbsp Dijon mustard
  • ½ tsp chopped garlic
  • 1 lb boneless skinless chicken breasts
  • 1 tsp oil (olive or canola)
  • 1 tsp pepper

Preparation

Step 1

Heat oven to 425. Arrange chicken in 9x9 pan sprayed with Pam. Mix mustard and garlic. Spread over chicken. Scrub potato, grate, and mix with oil. Spread over chicken. Sprinkle with pepper. Bake 30 – 35 minutes till chicken is done and potatoes are golden.
