Ingredients
- 1 NINE INCH PIE CRUST - UNBAKED
- 1/3 CUP SUGAR
- 1 TBS CORNSTARCH
- 1 (8 0Z( CAN CRUSHED PINEAPPLE-UNDRAINED
- 8 OZ CREAM CHEESE, SOFTENED
- ANOTHER 1/2 CUP SUGAR
- 1/2 TSP SALT
- 1/3 CUP MILK
- 2 EGGS
- 1/2 TSP VANILLA
- 1/2 CUP CHOPPED MACADEMIA NUTS. (I USE MORE)
Preparation
Step 1
PREHEAT OVEN: 400.
IN SAUCEPAN BLEND SUGAR WITH CORNSTARCH AND ADD PINEAPPLE. COOK STIRRING CONSTANTLY UNTIL MIXTURE IS THICK AND CLEAR.COOL
IN MIXING BOWL, BEAT CREAM CHEESE WITH SUGAR AND SALT.ADD EGGS ONE AT A TIME BEATING WELL. BLEND IN MILK AND VANILLA
SPREAD COOLED PINEAPPLE MIXTURE IN THE BOTTOM OF UNBAKED PIE CRUST.POUR CREAM CHEESE MIXTURE OVER OVER PINEAPPLE LAYER, THEN SPRINKLE CHOPPED NUTS ON TOP. pECANS CAN ALSO BE USED IN PLACE OF MACADEMIA NUTS. BAKE FOR 10 MIN AT 400 DEGREES THEN REDUCE HEAT TO 325 DEGREES AND BAKE FOR 50 MIN. YOU MAY WANT TO CHECK IT A COUPLE OF TIMES TO SEE IF IT IS DONE. BAKE TILL KNIFE WHEN STUCK IN MIDDLE COMES OUT CLEAN.
