Beef Fajitas

Ingredients

  • 1 lb. beef (stir fry strips)
  • 1/4 C Italian dressing
  • 3/4 C Salsa
  • 3 T. lime juice
  • 1 t. Worcestershire sauce
  • 1 onion (sliced)
  • 1 bell pepper (red or yellow strips)
  • 1 - 14 oz. can tomatoes (diced)
  • 12 flour tortillas
  • 1 large zipper bag

Preparation

Step 1

Make sure meat is cut into bite size strips. Put 1 lb. meat into each zipper bag. Combine salad dressing, salsa lime juice and Worcestershire sauce and stir together. Drain canned tomatoes. Add tomatoes and rest of ingredients, except tortillas, to sauce mixture and stir. Pour over meat in bag. Remove air, seal bag and freeze.

Cooking Stir fry - high heat on stove until meat is fully cooked.

If fajitas mixture looks too juicy to put into a tortilla shell, try thickening the sauce by mixing 1 T. cornstarch with 1 T. cold water and then add to meat mixture on stove and stir well. Top with sour cream, shredded cheese, shredded lettuce and salsa. Wrap tortilla and enjoy.
