Baked Eggs with Bacon and Spinach

Ingredients

  • 6 slices bacon
  • 15 oz bag baby spinach
  • 2 sourdough English muffuns, split and toasted
  • 4 large eggs
  • 4 T heavy whipping cream

Preparation

Step 1

Preheat oven to 400 degrees. Cook bacon. Reserve drippings. Add spinach to pan, salt and pepper and toss 1 minute. Drain in strainer. Brush ramekins with bacon grease.Place muffin in each ramekin. Top with spinach, then bacon. Make well with spoon then crack one egg into each. Drizzle 1 T cream over each. Sprinkle with salt and pepper. Bake until egg whites are set but yolks are runny..about 14-16 minutes.
