Ingredients
- 3 large oranges
- 1 1-pound 7-ounce can sweet potatoes
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1 tablespoon brown sugar
- 2 cups miniature marshmallows
- 2 tablespoon melted butter
Preparation
Step 1
Halve oranges, clean completely, removing all membranes and saving only the pulp and juice. Wash shells and set aside. Mash sweet potatoes and add cream, salt and brown sugar. Add orange pulp and juice. Fill orange halves with mixture and top with marshmallows. Set shells in glass casserole or pie plate. Microwave for 5 minutes.
