Penne pasta with fresh tomato-arugula sauce

Ingredients

  • 12 oz. whole-wheat penne pasta
  • 1 lb. diced tomatoes (about 2 cups)
  • 3 c. arugula, cut into strips
  • 1/2 c. fresh basil, cut into strips
  • 2 tbl. olive oil
  • 1 tbl. balsamic vinegar
  • 1/2 tsp. minced garlic
  • 1/2 tsp salt
  • 1 c. fresh Parmesan, shaved

Preparation

Step 1

Cook pasta according to directions on box; drain.

Combine tomatoes, arugula, basil, oil, vinegar, garlic and salt.

Add cooked pasta to bowl; toss and top with cheese shavings.

Per serving: 325 calories, 47 grams carbohydrates, 3 grams fiber, 9 grams fat.
