Shrimp Diablo

Ingredients

  • 8 oz uncooked angel hair pasta
  • 2 tsp vegetable oil
  • 1 lb large shrimp, peeled & deveined
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 Tbsp bottled minced garlic
  • 1-1/2 tsp chile paste with garlic
  • 1 tsp ground cumin
  • 1 14.5oz can diced tomatoes, undrained
  • 1/2 cup chopped fresh parsley
  • 1/2 tsp crushed red pepper

Preparation

Step 1

Cook pasta according to pkg directions, omitting salt and fat.

While pasta cooks, heat oil in a large nonstick skillet over med-high heat. Sprinkle shrimp with salt and black pepper. Add the shrimp to pan, and cook 1 min on each side or until done. Remove shrimp from pan.

Add garlic to pan; saute 1 min. Add chile paste, scraping pan to loosen browned bits. Add cumin and tomatoes; simmer 10 min, stirring occasionally. Remove pan from heat. Stir in shrimp, parsley, and red pepper. Toss with pasta.
