Zucchini Cake

Ingredients

  • 1 cup white sugar
  • 1 cup brown sugar
  • 2.5 cups flour
  • 2 tsp soda
  • 1 tsp baking powder
  • 1 tbsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp cloves
  • 1 tsp salt
  • 1 cup oil
  • 1 tbsp vanilla
  • 3 eggs
  • 2 cups grated zucchini
  • 1 cup raisins
  • 1 cup chopped walnuts
  • 2 tbsp grated orange rind

Preparation

Step 1

Into a fairly large bowl, measure the sugars, flour, soda, baking powder, spices and salt, sifted together. Pour in the oil, add the vanilla, and break in the eggs; beat all together till well blended. Stir in the zucchini, raisins, nuts and orange rind. Pour into a 13x9 pan. Bake at 350°F for 45-50 minutes. Cool in the pan on a rack.
