Herbed New Potatoes

Ingredients

  • 12 small new potatoes
  • 4 tsp. butter
  • 1 1/3 tsp dried parsley
  • 1 1/3 tsp dried chives

Preparation

Step 1

Peel 1/2 inch strip around the center of each potatoes and immediately place potatoes in a medium saucepan of cold water.
Add enough additional water to the saucepan to cover the potatoes by 2 inches. Bring to a boil over med-high heat. Boil until the potatoes are easily pierced by a fork but firm, about 20 minutes; drain. Do not covercook... cover to keep warm.
Melt butter in microwave. Stir in parsley and chives. Pour the butter mixture over the potatoes and toss to coat. Serve immediately.
Option: sprinkle with chopped cooked bacon and/or minced green onions.
