Salmon Pasta

Ingredients

  • 2 tsp. canola oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups low-fat, low-sodium chicken stock
  • 1 cup whole wheat macaroni
  • 1 1/2 cups chopped broccoli
  • 1/3 cup light herb and garlic cream cheese
  • 6 oz. skinless salmon fillet
  • 2 tbsp. chopped fresh parsley
  • pinch each salt and freshly ground pepper

Preparation

Step 1

Preheat oven to 425 F. In saucepan, heat 1 tsp. oil over medium heat. Cook onion and garlic for about 3 mins. until softened. Add stock and bring to a boil. Add pasta and cover. Reduce heat to simmer and cook for 10 mins. Stir in broccoli and cream cheese. Remove from heat. Let stand, covered for 10 mins. while fish cooks. Rub remaining oil over fillet and sprinkle with parsley, salt and pepper. Roast in small pan about 10 mins. or until fish flakes. Break up into chunks and add to pasta. Stir gently to combine.
