Ingredients
- 1 1lb 8 oz pkg refrigerated msahed potaotes
- 4 boneless pork loin chops, 3/4 in thick
- 2 Tbs oilive oil
- 1 large red onion, quartered and sliced (2 C)
- 1/4 c red wine vinaigrette dressing.
Preparation
Step 1
prepare potatoes. Meanwhile, season chops with salt and pepper. In a 12 in skillet heat oil over med-high heat. Add pork chops and cook for 3 minutes. Turn; add onion. Cook 10 minutes more until chops are done, turning to brown evenly. Stir onion occasionally. Transfer chops to serving plates.
Add tomatoes and vinaigrette to onion; cook and stir 1 minute more. Serve on chops with potatoes.
