Greek Couscous with Feta

Ingredients

  • 1 1/4 cups sodium-reduced chicken broth
  • 1 cup whole wheat couscous
  • 1/4 cup crumbled feta
  • chopped fresh parsley
  • greek vinaigrette salad dressing
  • juice from 1/2 a lemon
  • salt and pepper to taste

Preparation

Step 1

Prepare couscous according to package directions. Stir in crumbled feta, parsley, dressing, lemon juice and salt and pepper to taste. Coarsely chop leftover roasted veggies and add to couscous.
