Ingredients
- 1 1/4 cups sodium-reduced chicken broth
- 1 cup whole wheat couscous
- 1/4 cup crumbled feta
- chopped fresh parsley
- greek vinaigrette salad dressing
- juice from 1/2 a lemon
- salt and pepper to taste
Preparation
Step 1
Prepare couscous according to package directions. Stir in crumbled feta, parsley, dressing, lemon juice and salt and pepper to taste. Coarsely chop leftover roasted veggies and add to couscous.
