Green Bean and Walnut Salad

Ingredients

  • 3/4 pound, fresh green beans, trimmed
  • 1/4 cup walnut pieces
  • 3 Tbs. chopped parsley
  • 3 Tbs finely chopped red onion
  • 1 Tbs. walnut or olive oil
  • 1/2 tsp red wine vinegar
  • 1 tsp djon mustard
  • salt and pepper to taste

Preparation

Step 1

Steam beans in a steamer basket over several inches of boiling water for 4 minutes. Transfer to a bowl. Toast the walnuts in dry skillet 3-5 minutes. Chop finely, transfer to small bowl. Add parsley and onion, and stir to combine. Whisk together oil, vinegar and mustard. Toss with green beans, top with walnut and serve warm or at room temperature.
