Flank Steak

Ingredients

  • flank steak
  • half cup of dijon mustard
  • handful of dried thyme
  • TBS of soy sauce

Preparation

Step 1

Trim fat from flank steak.

Cut about 1/4" deep slices across the grain about 1/2" apart across the whole flank on both sides.

Mix together about a half cup of dijon mustard (or more depending on size of flank - must have enough to coat both sides of flank well), a handful of dried thyme and a couple of TBS of soy sauce. (You really need a lot of thyme - don't skimp.)

Smear this on both sides of the flank (let marinate for a couple hours or more) and grill on the barbie, medium to med. rare is best. (This also works if you do it last minute.)
