Ingredients
- 3 Tbsp. Extra-Virgin Olive Oil
- 2 C. Cherry Tomatoes, halved
- 1/2 C. Fresh Dill, chopped
- 1 tsp. Lemon Zest, grated
- 1 C. Orzo
- 11/2 C. Crumbled Feta (6oz.)
- Salt
- Freshly Ground Black Pepper
Preparation
Step 1
Toss together oil, tomatoes, dill, zest, & 1/2 tsp. each of salt & pepper in lg. serving bowl. Let stand at least 10 min. Meanwhile, cook orzo in pasta pot of boiling, salted water till al dente. Drain orzo, let cool, then toss with tomato mixture. Add feta & toss again.
