Ingredients
- 1/4 cup oil
- 4 large potatoes chunked/ or hash brown equal to
- 1 large onion grated
- 3 eggs
- 1 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup flour
Preparation
Step 1
Preheat oven to 375
Place oil in 8 inch square Pyrex casserole dish
Place casserole in the oven and heat oil until pipping hot, about 5 minutes.
Meanwhile mix grated onion and potatoes in processor. Drain excess liquid. Add eggs and seasonings, mix well and add flour. Add 3 tablespoons of the heat oil from the casserole to the mixture and mix in. Leave remaining oil in the casserole. Pour mixture into the casserole. Sprinkle a little more oil on top. Bake uncovered 1 hour and brown on all sides.
