(Crockpot) Bean Soup

Ingredients

  • 1 lb pinto beans, soaked overnight
  • 2 pork hocks
  • 1 large onion chopped
  • 2 cloves garlic, minced
  • 1 T salt
  • 2 T chili powder
  • 1 T cumin
  • 1 t oregano
  • 1 4 oz can green chiles or chopped fresh jalapeños
  • 1 can Rotel tomatoes (optional)

Preparation

Step 1

Put all ingredients in crock-pot.
Add 8 cups boiling water (I used half chicken stock).
Cover and cook on low at least 8 hours (this may take as little as 4-6 hours)
