Ingredients
- 2# hickory smoked bacon
- 2# shrimp or scallops
- 3 TBL butter
- 2 garlic cloves, minced
- l/3 c. chicken broth
- 2/3 c. honey BBQ sauce
Preparation
Step 1
Cut bacon in strips in half. Wrap a piece of bacon around each shrimp or scallop; secure with toothpick. Arrange the wrapped shrimp or scallops on a baking sheet. Broil 5 inches from heat for 3 minutes per side or until bacon is crisp. In a small skillet, melt butter; and minced garlic and saute for 1 minute. Add the broth and the BBQ sauce; bring to a boil. Cook 2 minutes. Liberally brush sauce on the shrimp/scallops. Place under broiler briefly til slightly bubbly.
