Nanaimo Bars

Ingredients

  • ½ cup butter or margarine
  • ¼ cup sugar (granulated)
  • 1 egg beaten
  • 1 ¾ - 2 cups Graham Cracker Crumbs
  • 5T. Cocoa
  • ¾ cup shredded coconut (fine or medium)
  • ½ cup walnuts (optional – I never use them)
  • ¼ cup butter
  • 3T. milk
  • 2T. vanilla custard powder (Bird’s Custard Powder) – baker or British foods
  • 2 cups confectioners sugar
  • 4 squares semi-sweet chocolate
  • 2T. butter

Preparation

Step 1

Mix sugar, butter, egg, cocoa & place over boiling water until mixture looks like custard. Remove from heat & add crumbs, coconut & walnuts. Spread in buttered 9 inch square pan & press down.

Cream ¼ cup butter, 3T. milk, 2T. vanilla custard powder & 2 cups icing sugar. Mix well & spread over base. Melt 4 squares semi-sweet chocolate & 2 T. butter in double boiler. Pour over squares. Refrigerate. After chocolate has set, cut through the chocolate only. This prevents the chocolate from breaking up when you slice completely through.
