Ingredients
- 1 whole chicken, cooked cut in chunks
- 2 Serrano peppers, diced
- 1 Tbsp. Oil
- 1 Large onion, diced
- 1 sm. can diced green chilie
- 1 oz. jalapeneo pepper
- 8 C. Chicken stock or broth (3 cans)
- Pinch of cilantro – chopped
- garlic to taste; cumin to taste salt to taste
- juice of 2 limes
- corn tortillas
- grated cheddar cheese
Preparation
Step 1
Heat 1 Tbsp. oil, add serrano peppers, onions, green chiles & jal. peppers. Heat 8 Cups of chicken stock, add pepper mixture, cilantro, garlic, cumin & salt. Add tomatoes, chicken and lime juice. If you can't find Chipolte peppers, Serrano peppers work well. In bowl, tear tortillas into bite size pieces, add grated cheese, cover with broth.
