Shallot-Parsley Vinaigrette

Ingredients

  • 1 Tablespoon Dijon mustard
  • 1/3 to 1/2 cup red wine vinegar (depending on the acidity of your vinegar)
  • 1 large whole egg
  • 1 1/2 cups vegetable oil
  • 3 Tablespoons finely minced shallots
  • 2 Tablespoons freshly minced parsley
  • salt and fresh ground black pepper to taste

Preparation

Step 1

Combine the mustard, 1/3 cup vinegar and the whole egg in a blender or food processor. With the engine running, add the oil in a steady fine stream until it is incorporated. Add the shallots, parsley, salt and pepper. Taste the dressing and add more vinegar if desired.
