Fried Green Tomatoes

Ingredients

  • 1 egg beaten
  • 1/2 cup milk
  • 1/2 cup self-rising cornmeal
  • 1/4 cup all-purpose flour
  • 4 to 5 Tablespoons vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 medium sized green tomatoes cut into 1/4 inch slices

Preparation

Step 1

Mix egg and milk. Set aside. Combine cornmeal, flour, salt and pepper. Dip tomatoes in egg mixture; dredge in cornmeal mixture. Heat vegetable oil in skillet over medium heat. Arrange slices in a single layer in skillet and cook until golden brown on both sides. Serve hot.

For cajun fried tomatoes, add 1/2 teaspoon cajun pepper.
