Texas Country Potato Salad

Ingredients

  • 8 strips of bacon
  • 1 lb potatoes
  • 1 bunch green onion, sliced (chives)
  • 6 boiled egg, chopped
  • 1-2 cups mayo
  • 1/4 cup dijon mustard
  • salt and pepper

Preparation

Step 1

Cook bacon until crispy.
Cut potatoes into bite size pieces and place in pot w/water. Cook until boiling and keep boiling for 20 minutes. Drain and let cool.
In a bowl, mix mayo, mustard, salt and pepper for dressing.
Toss potatoes, onion and egg in dressing. Add bacon. Serve chilled.
