Parmesan Crusted Chicken

Ingredients

  • 2 skinless, boneless chicken breasts
  • 2 egg whites
  • 2 Tbsp. cornstarch
  • juice of 1/2 lemon
  • 1 cup bread crumbs
  • 1 Tbsp. chopped parsley
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 cup shredded parmesan cheese
  • 3 Tbsp. EVOO

Preparation

Step 1

Preheat oven to 450.

Cut each piece into 4 pieces, lengthwise. Pound to about 1/2 inch thick pieces.

Blend egg whites, cornstarch and lemon juice.

Combine the bread crumbs, parmesan cheese, parsley, salt and pepper.

Dip each piece into the egg mixture and then roll in bread crumbs.

Saute the chicken until golden on each side. Cook for 8-10 minutes.
