CREAMY SPINCACH ENCHILADAS

Ingredients

  • 8 Flour tortillas
  • ½ cup Green onions
  • 1 Tbsn Butter
  • 10 oz Spinach
  • 1 cup Cottage or ricotta cheese
  • ½ cup Sour cream.
  • 2 cup Monterey jack
  • 10 oz Enchilada sauce
  • Sour cream opt
  • Green onion opt

Preparation

Preheat oven, saute’ onions in butter until tender, add spinach, cook until evaporated, stirring occasionally. Remove from heat, stir in cottage or ricotta chs. Sour cream and 1 cup shredded cheese, warm tortillas as directed, fill each tortilla with ¼ cup filling roll up, place in greased 9x 13 pan, pour enchilada sauce over tortillas, top with remaining cheese, bake until heated, top with sour cream and onions if desired.
