Ingredients
- 2 lb Potatoes
- 1 med Chopped onion
- 1 sm Chopped red pepper
- 1/3 cup Salad oil
- ¼ cup Vinegar
- 2 tbsn Water
- 1 tbsn Dill
- ¼-1/2 tsp Cayenne pepper
Preparation
Step 1
Scrub potatoes and cut, place in dutch oven, cover with water and ¼ tsp salt and boil. Cover and simmer 12-15 min until tender, drain. Place potatoes, onion and pepper in bowl and toss. In screw top jar, combine oil, vinegar, water, dill and cayenne pepper. Cover and shake well. Pour over potatoes, toss to coat, cover and chill
