Ingredients

  • 1/2 c water
  • 1/4 tsp ground allspice
  • 1 cup orange juice
  • 1/2 tsp salt
  • 3/4 cup whole wheat couscous
  • 2 Tbsp olive oil
  • 1 medium onion sliced
  • 1 medium green pepper sliced
  • 3 cloves minced garlic
  • 1 1/2 tsp curry powder
  • 1 (15 oz) chickpeas drained and rinsed
  • 1/2 c dried apricots sliced
  • 1/2 c dried sweetened cranberries
  • 3 Tbsp chopped cilantro

Preparation

Step 1

Combine water, allspice,1/2 cup orange juice, 1/4 tsp salt in sauce pan over medium heat. Boil and stir in couscous. Cover and remove from heat.Let stand 5 minutes and fluff with fork. Heat oil and add onion, pepper, garlic and curry powder. cook until vegetables are tender about 10 minutes. Stir in chickpeas, apricots and cranberries, stirring occasssionally for two minutes.
Pour in remaining 1/2 cup orange juice and cook 1 minute. Remove from heat and add cilantro and 1/4 tsp salt. Serve over couscous.
