Ingredients

  • 1/4 pound salt pork, rind removed – can substitute thick applewood smoked bacon, cut into lardons
  • 1 1/2 cup chopped onion
  • 2 teaspoons minced garlic
  • 2 cans black beans, drained and rinsed
  • 2 cans pinto beans, drained and rinsed
  • 1/2 cup ketchup
  • 1/2 cup unsulfered molasses
  • 1/2 cup water
  • 1/4 cup firmly packed brown sugar
  • 1/4 cup cider vinegar
  • 2 teaspoons dry mustard
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon Tobasco sauce

Preparation

Step 1

Preheat oven to 325°F. Cook salt pork/bacon in Dutch oven over medium heat until fat rendered and golden brown.

Add onions and garlic; cook until soft and translucent. Stir in remaining ingredients. Cover and bake 1 hour. Stir, then bake uncovered 30 minutes more.
