Singapore Rice Noodles

Ingredients

  • 8 ounces of dried noodles
  • 2 Tbsp curry powder
  • 5 Tbsp peanut oil
  • 8 ounces medium shrimp
  • 4 ounces boneless chicken breast
  • 1 Tbsp fresh minced ginger
  • 1 garlic clove minced
  • 1/2 fresh hot chili pepper seeded and chopped
  • 3 ounces of chinese bbq pork
  • 1/2 red bell pepper chopped
  • 6 green onions chopped
  • 1/2 cup chicken broth
  • 3 Tbsp soy sauce
  • 2 Tbsp sherry
  • 2 Tbsp chopped fresh cilantro

Preparation

Step 1

1. Bring a large pot of salted water to a boil
2. Drop in noodles and boil until tender approx 5 minutes
3. Drain and rinse under cold water
4. Spoon 1 Tbsp peanut oil into heavy saucepan
5. Add the shrimp and cook until pink remove shrimp and reserve in a bowl
6. Add 1 Tbsp to pan and add chicken and pork stirfry until cooked about one minute
7. Add2 Tbsp oil and stir fry ginger, garlic, chilies and 1-1/2 Tbsp curry powder
8. Stir fry until fragrant about one minute
9. Add the red peppers and stir fry for one minute
10. Sprinkle 2 Tbsp water and cook until boiled away
11. Push the ingredients to the side of wok and add 1 Tbsp of oil
12. Addthe noodles and fry until crisp
13. Addthe the green onions and continue cooking for one minute
14. Pour in the chicken broth and bring to a boil
15. Return the shrimp pork and chicken to the wok and add the soy sauce and sherry
16. Toss well and sprinkle with cilantro
17. Serve hot
