Italian American Cookie Sandwish

  • 1 stick unsalted butter, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 egg
  • 1 and 1/4 cups flour
  • 1/2 cup strawberry, raspberry, or other fruit preserves

Preparation

Step 1

Preheat oven to 350 degrees.

Line baking sheets with parchment paper. Using an elecrtic mixer, beat butter, sugar, vanilla, and salt in a large bowl until fluffy. Beat in egg. Add the flour and mix just until dough forms.

Refrigerate dough for 2-3 hours. Roll 2 teaspoons of dough for each cookie into 1 inch ball. Place cookies on the baking sheet, 2 inches apart. Make a deep indentation in the center with back of spoon. Fill with preserves. Bake for 15 minutes or until cookies are pale golden around the edges and on bottom.
