Spicy Bean Dip

Ingredients

  • 1 lb. ground beef
  • 1 T olive oil
  • 1 onion chopped
  • 1 clove garlic, minced
  • 1/2 C hot ketchup
  • 1-1 1/2 T chili powder
  • 1/2 t cumin powder
  • 1 can (15 oz) red kidney beans, mashed with the juice
  • 2-3 T red wine (optional)
  • s/p to taste
  • 3/4 C grated cheddar cheese
  • 1/2 C sliced green olives, with pimiento
  • Tostada Chips

Preparation

Step 1

In a large skillet, saute onions and garlic in olive oil over medium
heat until opaque. Add the meat and cook until well browned. Add the
ketchup, chili powder, cumin, kidney beans, wine & s/p and heat,
stirring until incorporated. Place in chaffing dish for serving and
top off mixture with the cheese. When the cheese has melted, add the
green olives for garnish and serve with the tortilla chips, warmed if
desired.
