Ingredients
- 2 Small butternut squash
- Water
- Salt
- ¼ cup Packed brown sugar
- 2 Tbsp Butter
Preparation
Step 1
Halve squash lengthwise; remove seeds. In 10” skillet over medium heat, in 1” boiling water, heat squash, cut side down, and ½ tsp salt to boiling. Reduce heat to low; cover; simmer until fork-tender. Drain; cool slightly. Scoop out pulp into large bowl; with mixer at low speed, beat squash, ½ tsp salt & remaining ingredients until smooth.
