Fruit mousse

Ingredients

  • 1 cup puree
  • 3 oz sugar
  • 3 sheets gelatin soaked in cold water.
  • 1 1/2 cups of heavy cream, whipped

Preparation

Step 1

Combine 1/2 puree, sugar and bloomed gelatin in a heavy bottom saucepan.

Heat until melted but do not warm too much

Cool over an ice bath until thickened

Whip cream to soft peaks.

Fold in and use immediately.
