Ingredients
- 2 Tbs. olive oil
- 1 chopped onion
- 2 cloves minced garlic
- 1/2 cup dry white wine
- 3 1/2 cups canned tomatoes with their juice, chopped
- 1 tsp. salt
- 1/4 tsp. black pepper
Preparation
Step 1
In a medium saucepan, heat the oil over moderate heat. Add the onion and cook until golden, about 5 minutes. Stir in the garlic and cook 1 minute longer. Add the white wine and simmer until almost evaporated. Add the tomatoes with their juice and the salt. Bring the sauce to a simmer and cook, partially covered for 1 1/2 hours. Add the pepper and puree the sauce in a food processor or blender.
