Spinach Pasta Toss

Ingredients

  • 6 oz orzo
  • 1/2 cup chopped onion
  • 1 clove minced garlic
  • 2 Tbsp olive oil
  • 6 c baby spinach
  • 1/3 c chopped black olives
  • 1/2 tsp salt
  • 1/4 tsp ground pepper
  • 1 1/2 c chopped grape tomatoes
  • 2 tsp lemon juice
  • 1/4 c soft goat cheese

Preparation

Step 1

Boil orzo. Saute garlic and onion. Add spinach and olives until the spinach is wilted, about one minute. Add salt and pepper. Toss orzo with spinach mixture, lemon juice, tomatoes. Top with goat cheese.
