- 3 cups Boneless Skinless Chicken Breast, cooked (grilled, rotisserie or poached) and chopped
- 2 Celery Sticks, chopped
- 2 Carrots, peeled and chopped
- 1/2 Red Pepper, seeded and chopped
- 1/4 Red Onion, chopped
- 1/4 Pineapple, cored, grilled and chopped
- 1/4 cup Cashews, toasted
- 1 cup Greek Yogurt
- 2 tbsp Extra Virgin Olive Oil
- Salt and Pepper, to taste
- Fresh Parsley, garnish

Directions:
In a large mixing bowl combine all of the ingredients and gently toss to combine. Serve in a bed of lettuce or serve as a lettuce wrap. Enjoy
