  • Ingredients:
  • 3 cups Boneless Skinless Chicken Breast, cooked (grilled, rotisserie or poached) and chopped
  • 2 Celery Sticks, chopped
  • 2 Carrots, peeled and chopped
  • 1/2 Red Pepper, seeded and chopped
  • 1/4 Red Onion, chopped
  • 1/4 Pineapple, cored, grilled and chopped
  • 1/4 cup Cashews, toasted
  • 1 cup Greek Yogurt
  • 2 tbsp Extra Virgin Olive Oil
  • Salt and Pepper, to taste
  • Fresh Parsley, garnish

Step 1

In a large mixing bowl combine all of the ingredients and gently toss to combine. Serve in a bed of lettuce or serve as a lettuce wrap. Enjoy
