Sausage Rigatoni Marsala

Ingredients

  • 1/2 Cup Olive Oil
  • 1 Lb Sweet Italian Sausage or Turkey Sausage
  • 2 Sliced Red Bell Peppers
  • 2 Sliced Yellow Onions
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 4 Chopped Garlic Cloves
  • 1/2 tsp Dried Oregano
  • 1 Tbsp Dried Basil
  • 2 Tbsp Tomato Paste
  • 1 Cup Marsala Wine
  • 14.5 oz Can Diced Tomatoes in Juice
  • 1/4 tsp Red Pepper Flakes
  • 1 Lb Rigatoni
  • Parmesan

Preparation

Step 1

Brown sausage in oil 7-10 minutes on medium. Remove. Add onions, peppers, salt, and pepper. Cook 5 minutes. Add garlic, oregano, and basil. Cook 2 minutes. Add tomato paste and stir. Add wine, tomatoes, and red pepper flakes. Simmer. Cut sausage and add to the pan. Simmer 20 minutes. Make rigatoni while sauce simmers. Toss pasta and sauce. Top with parmesan.
