Cauliflower Cheese Soup

Ingredients

  • 1 large head cauliflower, chopped
  • 1 cup chopped onion
  • 14 1/2 oz. chicken broth
  • 1 chicken bouillon cube
  • 2 T. butter
  • 1 T. flour
  • 1 cup cream
  • 2 cups water
  • 8 oz. cheddar cheese
  • 1 T. parsley
  • 1 t. salt
  • 1/8 t. Cayenne pepper
  • 1/8 t. white pepper
  • 1 cup ham cubes

Preparation

Step 1

In large saucepan combine cauliflower, onion, broth and bouillon cube. Cover and cook over medium heat until veggies are tender. In another pot, melt butter. Stir in flour until smooth. Mix together cream and water and gradually add to flour mixture. Cook and stir until bubbly and continue cooking and stirring for 2-3 minutes until thickened. Reduce heat and add seasonings and cheese. Pour all into cauliflower mixture. Simmer slowly for 30 minutes.
