CRABMEAT QUICHE

Ingredients

  • 1 unbaked 9" pie shell (see my pie crust recipe)
  • 2 large eggs
  • 1 cup half & half cream
  • 3/4 cup of shredded swiss cheese
  • 3/4 cup of gruyere cheese (or cheddar)
  • 7 1/2 ounces crabmeat cut into small pieces

Preparation

Step 1

Prick bottom and sides of pie shell. Bake at 450 degrees for 10 minutes or until lightly brown.
Beat together the eggs and half 'n half cream. Combine both the cheeses and the crab.

Pour in egg and cheese mixture. Bake uncovered at 325 degree oven for 45 minutes or until tip of knife inserted 1" from center comes out clean. Let stand a few minutes.

Cut into 6 wedges.
