BROCCOLI CASSEROLE

Ingredients

  • 1 10-ounce package frozen chopped broccoli
  • 1 large egg, beaten
  • 1/2 c mayonnaise
  • 1/2 (10-ounce) can cream of mushroom soup
  • 2 T onion, grated
  • 5 ounces sharp Cheddar cheese, grated
  • Salt and pepper
  • 1/2 c bread crumbs

Preparation

Step 1

Preheat oven to 350 degrees F. Butter a 9x13x2-inch casserole dish. Cook broccoli in water, drain and set aside to cool. In large bowl combine broccoli eggs, mayonnaise, soup. onion and 1 cup of cheese. Add salt and pepper, then pour into casserole dish. Bake for 30 minutes. Remove casserole from oven and sprinkle with bread crumbs. Top with remaining cheese. Return to oven and bake until crumbs brown slightly and cheese melts, about 10 minutes.
