Ingredients
- 1 1/2 C softened butter
- 2 C sugar
- 4 eggs
- 1 C sour cream
- 1/2 t baking powder
- 1 t coconut extract or vanilla
- 1 3/4 C flour
- 2 C packed coconut
Preparation
Step 1
Generously grease and flour bandut pan. Cream buter and sugar. Add eggs. Beat till fluffy. Add sour cream, baking powder and coconut extract.
Put flour and coconut in food processor. Process with steel blade until mixture looks like fine corn meal. Add half at a time to above. Let rest 5 minutes. Bake for 60 - 70 minutes. Cool 25 minutes and loosen with knife and remove from pan.
GLAZE
1 C powdered sugar
1/4 C heavy cream
1 t coconut extract
(1/4 C flaked coconut)leave for topping
Mix and pour over cake. If too thick, add a little more cream.
Sprinkle coconut on top before glaze sets.
