Vegetable Soup

Ingredients

  • 1 lge onion, chopped
  • 3 stalks celery, chopped
  • 2 large carrots, chopped
  • 1 29-oz can whole tomatoes
  • 2 cans diced white potatoes
  • 1 8-oz can tomato sauce
  • 1 tsp seasoned salt
  • 4 Tbsp butter
  • 1 bag frozen mixed vegetables
  • 2 c V-8 vegetable juice

Preparation

Step 1

Crush tomatoes. Place all ingredients in large pot. Add 2 cups water and V-8. Add additional water to cover, if necessary. Bring to a boil; reduce heat and simmer for 45 minutes. Add additional salt, pepper and chicken boullion granules to taste.
