Ingredients
- 1 lb Pinto Beans
- 1/4 tsp Garlic, minced (3 large cloves)
- 1 cup Onion, diced
- 1/4 cup of Jalapeno Juice (from canned jalapenos)
- 1/4 lb Salt Pork
- Salt to taste
Preparation
Step 1
Rinse & sort beans then either cover with one inch of water & soak overnight or bring water to a boil, remove from heat & cover for one hour.
Drain beans & cover with 7 cups of fresh water.
Add the garlic, onion, jalapeno juice, salt pork (quartered) & 1 or 2 jalapenos chopped (makes spicery).
Bring pot to a boil & then cover & reduce heat to a simmer, stir occasionally.
Cook several hours or until tender.
Remove salt pork & serve.
