Beef and Limas

Ingredients

  • 3 lbs. stew beef cut into 1" squares
  • Salt & Pepper to taste
  • 2 tbsp shortening
  • 1 large onion sliced
  • 1/2 c. brown sugar
  • 1 tbsp. flour
  • Onion Rings
  • 1 tsp. dry mustard
  • 2 tbsp. vinegar
  • 2 tbsp. lemon juice
  • 1/4 tsp. grated lemon rind
  • 1 Bay Leaf
  • 1 1/2 c. water
  • 3 - 1 lb. can cooked limas, drained

Preparation

Step 1

Heat oven to 400. Sprinkle beef with salt & pepper. In heavy skillet heat shortening & brown beef. remove to a 3 qt. casserole. Saute onion until golden brown. Pour off drippings. Add brown sugar, mustard, flour, vinegar, lemon juice, lemon rind, bay leaf, and water to onion. Bring to boil, stirring, then pour over beef. Bake uncovered, 1 1/4 hours or until meat is almost tender. Stir limas. Bake covered. 1/2 hour ntil fork tender. Garnish with onion rings.
