Ingredients
- 3 sweet potatoes, cut into 1/4-inch-thick slices
- 2 garlic cloves, minced
- 4 Tbsp. olive oil
- 1/4 cup fresh parsley, rough chopped
- 1/2 tsp. fresh thyme, roughly chopped
- 2 Tbsp. orange zest
- 1 Tbsp. orange juice
- Salt and pepper, to taste
Preparation
Step 1
Toss the sweet potatoes with the garlic and olive oil. Meix herbs, orange zest and juice, then toss with potatoes. Season with salt and pepper as desired. Roast for approximately 30-35 minutes or until potatoes are fork-tender. If you like, you can make lime potatoes. Substitue 1/4 teaspoon cayenne, 1/2 teaspoon finely grated lime zest and 1 tablespoon fresh lime juice for the fresh herbs, orange zest and juice. Refrigerate any leftovers.
