BLUEBERRY MUFFINS

Ingredients

  • 1 egg
  • ½ cup milk
  • ¼ cup vegetable oil
  • 1 ½ cup flour
  • ½ cup sugar
  • 2 tsp. Baking powder
  • ½ tsp salt
  • 1 cup blueberries

Preparation

Step 1

Beat egg with fork. Stir in milk and oil. Blend in dry ingredients. Stir just until flour is moistened. Batter should be lumpy. Add blueberries. Fill muffin cups 2/3 full. Bake at 400º for 20-25 minutes.
