Thai Curried Chicken

Ingredients

  • 1 lb chicken (breast or thigh) sliced in strips
  • 2 cups coconut milk
  • 1 can pineapple chunks
  • 1 Tbs red curry paste
  • 1 medium onion
  • 1/2 cup broccoli heads
  • 1 bunch basil
  • 1 tsp fish sauce
  • 1/4 cup ginger garlic pepperjelly
  • 1/4 cup brown sugar

Preparation

Step 1

Stir-fry red curry with 1 can coconut milk. heat until boiling. Boil 2 min. Turn to simmer.
Add pepperjelly, brown sugar and fish sauce, stir.
Add chicken, stir
Add broccoli, basil and pineapple, stir
Let simmer 15 min.

Serve over Jadmine rice
