Ingredients
- 1 lb chicken (breast or thigh) sliced in strips
- 2 cups coconut milk
- 1 can pineapple chunks
- 1 Tbs red curry paste
- 1 medium onion
- 1/2 cup broccoli heads
- 1 bunch basil
- 1 tsp fish sauce
- 1/4 cup ginger garlic pepperjelly
- 1/4 cup brown sugar
Preparation
Step 1
Stir-fry red curry with 1 can coconut milk. heat until boiling. Boil 2 min. Turn to simmer.
Add pepperjelly, brown sugar and fish sauce, stir.
Add chicken, stir
Add broccoli, basil and pineapple, stir
Let simmer 15 min.
Serve over Jadmine rice
