Spiced Pickled Beets

Ingredients

  • Syrup:
  • 12 c of cooked and diced Beets
  • 2 c Cider Vinegar
  • 2 c White Sugar
  • 2 c Water
  • 1 tb Salt
  • Tie in Cheesecloth:
  • 2 tb Pickling Spices
  • 1 tsp Whole Cloves

Preparation

Step 1

Add all ingredients to a large pot and bring to a boil - boil for about 5 minutes. Remove spice bag and keep syrup hot while packing the beets.
Pack each bottle with beets. Pour hot syrup over beets to completely cover them. Seal, cool and store.
