Wild Rice Salad

Ingredients

  • 1 1 1 c. Wild Rice
  • 5 5 5 c. Chicken stock
  • 1 1 1 c. Pecans
  • 1 1 1 c. raisins
  • Grated orange rind
  • 4 4 4 scallions, thinly sliced
  • 1/4 1/4 1/4 c. oil
  • 1/3 1/3 1/3 orange juice
  • 1 1 1 tsp. salt

Preparation

Step 1

Boil rice in chicken stock until all stock is absorbed. Let stand for 2 hours. Mix remaining ingredients with rice, and refrigerate. Serve at room temperature.
